Turner Classics", a series of cooking classes held on Wednesday
evenings from 7-9pm at Trail Appliances in Richmond. We'll be
serving up Raintree Tea that pair well with Kevin's
creations.
March 3, 2010: STOCK, SOUP, STEW
Chef Kevin Turner discusses and demonstrates the importance of
making stocks and how to cook with them. If you like tasty chicken
soup, you’ll want to know how to make a good stock. He’ll
show you how to use stock to braise, make risotto, and a sauce.
How about demi-glace? Bouquet-garni? Tomato sauce? Chef Kevin
will show you how to do that as well. He’ll also make a
vegetable ragout.
April 7th, 2010: CHICKEN AND THE EGG
Chef Kevin Turner makes the perfect poached egg, perfect roast
chicken, perfect omelet. Includes how to tell when chicken is
cooked to perfection, how to carve a chicken, and how to use leftovers
in the ultimate salad.
May 5th, 2010: HOW TO BUY & COOK A GREAT STEAK
Chef Kevin Turner is all about how to understand the different
cuts of meat and what to do with them. What exactly is Prime?
What constitutes marbling? How aged is aged? How do I cook it?
And how do I establish a relationship with my butcher?
June 2, 2010: SUNDAY DINNERS
Chef Kevin Turner demonstrates how he keeps cooking simple and
lets the fresh flavours speak for themselves. His recipes gather
his family around the kitchen table on Sunday nights. Guests will
enjoy his inspiring menu and learn tips and for recreating an
equally inspiring meal at home.
